Day 359 Christmas Eve Our kids didn't want much of the dinner we made this evening, so Robert and I had a dinner for two. I was very pleased with this spinach salad. I love the method of using the hot fat from having cooked the bacon to make the dressing. When poured over the spinach it gets softer but not fully cooked, so we're getting both the extra nutrition of raw food as well as the yumminess of cooked (for those of us who prefer cooked). In addition to bacon, the salad was also topped with caramelized red onion and mushroom slices. The dressing had bacon fat, vinegar, sugar and Dijon mustard. We also had mahi mahi and rice.
